Baked Almond Fetta
Delicious rosemary flavour, perfect for pizza!

INGREDIENTS
- 2 cups blanched almond meal - 3 tsp lemon zest - 4 tsp lemon juice - 2 tbs olive oil - 1/2-1 tsp salt (to taste) - fresh rosemary twigs 
DIRECTIONS
- Pre-heat oven to 200c 
- Line a small spring form tin with baking paper 
- Add all the ingredients except for the rosemary to a mixing bowl and knead it to form a ball (add a little more oil if too dry) - This is a good time to taste and add more salt or lemon juice to taste if needed 
- Transfer it to the spring form tin and press it flat. Add the rosemary twigs on top. 
- Bake in the oven for 20mins or till the top goes golden. 
- Let it cool a bit then transfer from tin on baking paper. 
- ENJOY! eat it on its own or put on pizza or pasta etc.
