Middle eastern Hommus
A healthy, delicious protein rich snack

SERVINGS: 4-6 PREPPING TIME: 15 MIN + 8 HOURS SOAKING TIME
INGREDIENTS
- 1 cup dried chick peas 
- 3 cups water 
- 1/3 cup tahini 
- ½ cup lemon juice 
- 2 or more cloves 
- crushed garlic 
- salt 
DIRECTIONS
- Wash chick peas well, cover with water and soak overnight. 
- Boil then simmer chick peas until tender in water used for soaking- you may need to add more. 
- For best results, remove the skins from the chick peas- a tedious task! Most will float on the surface of the simmering water. 
- Use a food processor to blend the chick peas, then add the other ingredients and continue blending until thick and smooth. Hold back some lemon juice and salt to adjust to taste.
